Juicy Lucy burger with molten cheddar oozing from the beef patty

A Minneapolis original with molten cheese stuffed inside the beef patty itself, oozing out with the first bite.

Cheese, meet beef — from the inside

Two thin patties sealed around a core of molten American cheese: the burger Minneapolis has argued about for decades.

Step by stepInstructions

  1. Divide the beef into 8 thin patties. Season with salt, pepper, and garlic powder.
  2. Pile the cheese quarters in the center of 4 patties, leaving a border.
  3. Top with the remaining patties and press and seal the edges completely so no cheese can escape.
  4. Heat a cast-iron skillet over medium-high heat and cook the burgers 4-5 minutes per side, until deeply crusted and the cheese is molten.
  5. Rest 3 minutes, then serve on buttered, toasted buns with your favorite fixings.

💡 Chef tips & storage

Seal those edges — a leak is a tragedy. Use American cheese; it melts into the perfect ooze. Rest before serving so the cheese sets slightly.
