Salat Mimoza

Salat mimoza layers canned fish, potatoes, carrots, onion, and cheese beneath a blanket of mayonnaise, all crowned with a snowfall of grated egg yolk. Named for the mimosa flower’s yellow bloom, it is as pretty as it is comforting.

A festive salad in the same family as Olivier and herring under a fur coat, mimoza graces Russian holiday tables with its soft, savory layers. Chill it well before serving so it slices like a dream.

Step by stepInstructions

  1. Mash the fish with a fork and spread it in the bottom of a dish; scatter the onion over it.
  2. Top with the potatoes, then a thin layer of mayonnaise.
  3. Add the carrots, another mayonnaise layer, then the grated cheese.
  4. Grate the egg whites over the cheese and spread with a little mayonnaise.
  5. Finish with finely grated egg yolks, garnish with dill, and chill at least 3 hours before serving.

Press each layer gently so the salad holds together when sliced. Use the yolks only for the top — the golden mimosa dusting is the signature look.
