Golden baked bierocks stuffed with seasoned beef and cabbage

Soft yeast rolls stuffed with seasoned beef, cabbage, and onion, brought to the Midwest by German-Russian settlers.

Hand pies from the prairie

German-Russian immigrants filled golden yeast rolls with savory beef and cabbage — the original Midwest hot pocket.

Step by stepInstructions

  1. Dissolve the yeast and sugar in the warm milk; let stand 5 minutes. Mix in the butter, egg, salt, and flour; knead until smooth. Cover and rise 1 hour.
  2. Brown the beef with the onion in a skillet; add the cabbage, salt, pepper, and garlic powder and cook until the cabbage wilts. Stir in the butter.
  3. Preheat the oven to 375°F. Divide the dough into 8 pieces and roll each into a 6-inch round.
  4. Spoon the filling onto each round, fold over, and pinch the edges to seal.
  5. Place seam-side down on a baking sheet, brush with the egg wash, and bake 20-25 minutes until deep golden.

💡 Chef tips & storage

Cool the filling before assembling so it doesn't tear the dough. Leftover bierocks reheat beautifully in a 350°F oven for 10 minutes.
