Step by stepInstructions

  1. Soak the cut potatoes in cold water 30 minutes, then dry thoroughly.
  2. Heat 2 inches of oil to 350°F. Fry the fries in batches 4-5 minutes until pale golden; drain and set aside.
  3. Whisk the flour, baking powder, salt, and paprika; whisk in the beer and egg to make a smooth batter.
  4. Raise the oil to 365°F. Dip the fish in the batter and fry 3-4 minutes until golden and crisp; drain on paper towels.
  5. Return the fries to the oil for 2 minutes to crisp and brown; season with salt. Serve everything hot with tartar sauce and vinegar.
