A baked ham glazed with pure New England maple syrup and brown sugar until sticky and caramelized.

Holiday ham, maple style

A spiral ham lacquered with maple and brown sugar turns the classic holiday centerpiece into something deeply New England.

Step by stepInstructions

  1. Preheat the oven to 325°F. Score the ham in a diamond pattern and stud with cloves if desired.
  2. Place the ham cut-side down in a roasting pan, add 1 cup of water, and cover loosely with foil.
  3. Bake 1 hour, basting occasionally.
  4. Whisk the maple syrup, brown sugar, mustard, vinegar, and ground cloves in a saucepan and simmer 3 minutes.
  5. Brush the glaze over the ham and bake uncovered 45-60 minutes more, glazing every 15 minutes, until deeply lacquered. Rest 15 minutes before carving.

💡 Chef tips & storage

Let the glaze layer up by brushing frequently during the last hour — that sticky crust is the reward. Save the bone for beans or soup.
