- Rub the fish inside and out with the lime and half the salt, then rinse and pat completely dry.
- Mix the flour, cornmeal, garlic powder, onion powder, thyme, black pepper and remaining salt in a shallow dish.
- Dredge the fish in the seasoned flour, pressing it on well and shaking off the excess.
- Heat 1 inch (2.5 cm) of oil in a large skillet over medium-high heat until shimmering.
- Fry the fish for 6 to 8 minutes per side, until deeply golden and crisp, then drain on paper towels.
- Serve hot with bammy, festival or fried dumplings, and a squeeze of lemon or a spoonful of pepper sauce.
