Vermont’s answer to Boston

Swap molasses for maple syrup and you get the Green Mountain State’s take on baked beans — woodsy, sweet, and deeply comforting.

Step by stepInstructions

  1. Soak the beans overnight, then simmer in fresh water 1 hour until tender; drain, reserving 2 cups of liquid.
  2. Preheat the oven to 300°F. Cook the bacon in a skillet until crisp; remove, and soften the onion in the drippings.
  3. Combine the beans, bacon, onion, maple syrup, ketchup, brown sugar, mustard, pepper, salt, and reserved liquid in a bean pot or Dutch oven.
  4. Cover and bake 4 hours, checking and adding water if needed; uncover for the last 30 minutes to glaze. Rest 10 minutes before serving.

💡 Chef tips & storage

Use real maple syrup — the flavor is the whole point. These keep beautifully for a week in the fridge and freeze well.
