Seared New York strip steak with butter

The New York strip comes from the short loin — the same cut as the porterhouse, without the tenderloin — and it’s prized for its beefy flavor and firm texture. Cooked in a screaming-hot cast iron pan with butter, garlic, and thyme, it’s a steakhouse dinner you can make at home in minutes.

Chef Emily presents New York Strip Steak

The steakhouse cut, made at home

A thick, well-marbled strip seared hard and basted with butter, garlic, and thyme — steakhouse quality in your own kitchen.

Step by stepInstructions

  1. Pat the steaks dry and season generously with salt and pepper. Let sit at room temperature for 30 minutes.
  2. Heat the oil in a cast-iron skillet over high heat until shimmering. Add the steaks and sear 3-4 minutes per side for medium-rare, without moving them.
  3. Reduce the heat to medium, add the butter, garlic, and thyme, and tilt the pan to spoon the butter over the steaks for 1-2 minutes.
  4. Transfer the steaks to a cutting board and rest 10 minutes.
  5. Slice against the grain and spoon the pan butter over the top.

💡 Chef tips & storage

Pat the steak bone-dry and salt it at least 30 minutes ahead for a better crust. Let it rest longer than you think — 10 minutes — so the juices stay in the meat.
