Patatas Bravas

Patatas bravas are crisp-edged potato cubes served with a spicy, smoky tomato sauce and a creamy garlicky drizzle. The contrast of crunchy potatoes, fiery sauce, and cool alioli is the definition of a good tapa.

They are the most-ordered tapa in Spain, and every bar guards its own sauce recipe — some fierce, some sweet, some loaded with cayenne. Serve them piping hot with toothpicks and cold beer.

Step by stepInstructions

  1. Toss the potatoes with the olive oil and salt on a baking sheet and roast at 425°F for 30-35 minutes, turning once, until golden and crisp.
  2. Meanwhile, make the brava sauce: simmer the onion and garlic in a splash of oil until soft, about 5 minutes.
  3. Add the crushed tomatoes, paprika, cayenne, and sherry vinegar. Simmer 15 minutes until thickened, then blend until smooth.
  4. Whisk the mayonnaise with the lemon juice to make a quick alioli-style drizzle.
  5. Pile the hot potatoes onto a platter and spoon the brava sauce over them.
  6. Finish with a zigzag of the alioli and a pinch of salt. Serve immediately.

💡 Chef tips & storage

Do not crowd the baking sheet — crowded potatoes steam instead of crisping. The brava sauce can be made days ahead and actually improves overnight.
