Fresh wild-caught salmon fillets grilled over cedar planks with a light herb and lemon finish.

Wild salmon is at its peak in PNW summers — a quick grill, a brush of herb butter, and lemon is all it asks for.

Step by stepInstructions

  1. Preheat the grill to medium-high and oil the grates.
  2. Pat the salmon dry and brush with olive oil; season with salt and pepper.
  3. Mix the butter, dill, parsley, lemon zest, and garlic.
  4. Grill the salmon skin-side down 6-7 minutes, then flip and grill 3-4 minutes more until just opaque.
  5. Top with the herb butter, rest 2 minutes, and serve with lemon wedges.

💡 Chef tips & storage

Grill skin-side down and don't move the fillets until they release easily. Pull the salmon at 125-130°F in the center for perfect flakes.
