Earthy wild mushroom soup with sautéed chanterelles and cream

Chanterelles, morels, or creminis — whatever the woods give you — become an earthy, velvety soup with cream and thyme.

Step by stepInstructions

  1. Melt the butter in a large pot over medium-high heat and sauté the mushrooms in batches until golden; remove.
  2. Cook the onion in the same pot until soft; add the garlic and thyme and cook 1 minute.
  3. Add the sherry and scrape up the browned bits; return the mushrooms and add the broth.
  4. Simmer 20 minutes, then purée half the soup and return it for texture.
  5. Stir in the cream, salt, and pepper; simmer 5 minutes. Serve with chives.

💡 Chef tips & storage

Sauté the mushrooms in batches — crowding steams them instead of browning. Puréeing half gives body while keeping some texture.
