Golden hazelnut crusted halibut fillet with roasted lemon

Halibut fillets coated in crushed toasted hazelnuts and pan-seared until golden and flaky.

Oregon’s nut on the coast’s fish

Toasted hazelnuts make a rich, crunchy crust for mild halibut — a pairing as Oregon as it gets.

Step by stepInstructions

  1. Season the halibut with salt and pepper.
  2. Set up three dishes: flour; beaten egg; hazelnuts mixed with panko.
  3. Dredge each fillet in flour, dip in egg, then press into the hazelnut mixture.
  4. Heat the butter and oil in a large skillet over medium heat.
  5. Sear the fillets 3-4 minutes per side until the crust is golden and the fish flakes. Serve with parsley and lemon wedges.

💡 Chef tips & storage

Toast the hazelnuts first — it doubles their flavor. Gently press the crust so it sticks, and don't crowd the pan.
