  1. Preheat the oven to 375°F and butter a 9x13 dish.
  2. Cook the macaroni 2 minutes shy of al dente; drain and toss with the butter.
  3. Whisk the eggs, evaporated milk, whole milk, salt, pepper, paprika, and dry mustard.
  4. Fold the macaroni with 3 cups of the cheddar and the Jack and Colby; transfer to the dish.
  5. Pour the custard over, top with the remaining cheddar, and bake 35-40 minutes until golden and set.
  6. Rest 15 minutes before serving.
