Kolaches came to Texas with Czech immigrants in the 1800s, and Central Texas has never been the same. These soft, pillowy yeast pastries are filled with sweet fruit preserves or savory sausage and cheese — the breakfast of choice at bakeries from Houston to West, Texas.

Step by stepInstructions

  1. Mix the flour, sugar, yeast, and salt. Add the warm milk, melted butter, and eggs and knead into a soft dough. Cover and rise until doubled, about 1 hour.
  2. Punch down the dough and divide into 12 pieces. Flatten each into a round, add a spoonful of filling (or a sausage link and cheese) in the center, and pinch the edges over the top.
  3. Place seam-side down on a baking sheet and let rise 30 minutes. Heat the oven to 375°F (190°C).
  4. Brush with beaten egg and bake 18-20 minutes until golden brown.
  5. Cool slightly and serve warm.

💡 Chef tips & storage

Don't rush the rise — the softness of the dough is everything. Use thick fillings (fruit preserves or a sausage link with cheese) so they don't leak while baking.
