  1. Pound the chicken breasts to an even 1/2-inch thickness. Soak in buttermilk for 10 minutes.
  2. Whisk the flour with the garlic powder, onion powder, paprika, salt, and pepper. Dredge each breast in the seasoned flour, pressing to adhere.
  3. Heat the oil in a large cast-iron skillet over medium-high heat. Fry the chicken 4-5 minutes per side until golden and cooked through. Drain on a rack.
  4. Pour off all but 3 tablespoons of oil. Whisk in the flour and cook 2 minutes, then slowly whisk in the milk. Simmer until thick and season generously with pepper.
  5. Serve the chicken smothered in the gravy.

💡 Chef tips & storage

Pound the chicken to an even 1/2 inch so it cooks through before the crust over-browns. Rest the breaded chicken 10 minutes before frying for a sturdier crust.
