Step by stepInstructions

  1. Heat the oven to 350°F (175°C).
  2. Brown the beef with the onion, about 6 minutes. Season with cumin and garlic powder.
  3. Warm a little oil in a skillet and quickly dip each tortilla to soften.
  4. Fill each tortilla with beef and cheese, roll up, and place seam-side down in a baking dish.
  5. Pour the chile gravy over the enchiladas and top with the remaining cheese. Bake 25 minutes until bubbling. Garnish with diced onion.

💡 Chef tips & storage

Dip the tortillas briefly in warm oil (or the gravy) so they roll without cracking. Top with raw diced onion for the classic diner finish.
