Tongan Lu Pulu

Lu pulu is the heart of Tongan home cooking: tinned corned beef mixed with onion and coconut cream, wrapped in young taro leaves and baked until the leaves melt into the filling. It is the dish served at family Sundays, funerals and celebrations across the kingdom.

The taro leaves turn silky and earthy, the coconut cream sweet and rich, and the corned beef savoury — a combination that is pure comfort. Serve with boiled taro or sweet potatoes to soak up the sauce.

Step by stepInstructions

  1. In a bowl, mix the corned beef, coconut cream, onion and salt.
  2. Blanch the taro leaves in boiling water for 3 minutes until pliable; drain and cool.
  3. Lay 2-3 leaves together, spoon 1/2 cup of the filling into the center, and fold into a parcel.
  4. Wrap each parcel in banana leaf or foil and place in a baking dish.
  5. Bake at 350°F for 45-60 minutes, until the leaves are tender and the filling is piping hot.
  6. Serve warm with boiled taro or sweet potato.

💡 Chef tips & storage

Add a few slices of fresh coconut or a chopped tomato to the filling for extra sweetness. Taro leaves must be fully cooked — when they are silky and dark green, they are ready.
