The chicken fajita bowl takes everything great about fajitas — marinated grilled chicken, charred peppers and onions — and serves it over rice with all the toppings. It’s the weeknight-friendly, bowl-ified Tex-Mex classic.

Step by stepInstructions

  1. Toss the chicken with the lime juice, oil, chili powder, cumin, and salt. Marinate 15 minutes.
  2. Sear the chicken in a hot skillet until cooked through, about 4-5 minutes per side. Rest, then slice.
  3. Char the peppers and onion in the same pan until tender, about 5 minutes.
  4. Divide the rice among bowls and top with beans, corn, chicken, and peppers.
  5. Finish with avocado, cilantro, sour cream, and salsa.

💡 Chef tips & storage

Marinate the chicken while the rice cooks, and char the vegetables hard for that smoky fajita flavor. Build the bowl with beans, corn, and plenty of lime.
