Churrasco Brasileiro

Churrasco is Brazil’s barbecue culture, born on the cattle ranches of the south and perfected over wood and charcoal. It is not just a meal but a long, happy gathering where meat is seasoned with nothing but salt and served as it comes off the fire.

Fire, smoke, and nothing but coarse salt

The meat develops a deep, crusty sear on the outside while staying rosy and juicy within, the fat crisping into pure flavor. With farofa, vinagrete, and garlic bread alongside, every bite is smoky, salty, and celebratory.

Step by stepInstructions

  1. Light the charcoal and let it burn down to glowing coals, or preheat a gas grill to medium-high, about 400°F.
  2. Thread the beef, sausage, and chicken onto separate metal skewers, leaving a little space between pieces so they cook evenly.
  3. Rub each skewer generously with coarse salt and a brush of olive oil — no other seasoning needed.
  4. Grill the beef skewers for 3 to 4 minutes per side (rotating the skewer a quarter turn each time) for medium-rare, about 12 minutes total.
  5. Grill the sausage for 10 minutes and the chicken for 12 to 14 minutes, turning often, until browned and cooked through.
  6. Rest all the meats for 5 minutes, then slice the beef thin against the grain and arrange everything on a big platter.
  7. Finish with a last sprinkle of coarse salt and serve with lime wedges, farofa, and vinagrete.

💡 Chef tips & storage

Churrasco tradition is one seasoning only: coarse salt, applied just before grilling. Cook the beef in thick cubes so the center stays rosy, and slice thin against the grain at the table.
