Feijão tropeiro was the traveling food of the tropeiros, the mule drivers who crossed colonial Brazil carrying goods and, it is said, pots of beans and farinha. Today this hearty mix of beans, crispy pork, eggs, and cassava flour is a proud staple of Minas Gerais cooking.
