Vatapá

Vatapá is a gift from Bahia’s African heritage, a thick, luxurious sauce that Brazilians spoon over rice or tuck inside acarajé. Its blend of coconut milk, dried shrimp, peanuts, and dendê oil is like nothing else in the world.

Velvet from Bahia’s Afro-Brazilian kitchens

Silky and spoonable, vatapá is rich with coconut, nutty with peanuts and cashews, and deeply savory from the shrimp, all warmed by the golden glow of dendê oil. It is intense, fragrant, and completely addictive.

Step by stepInstructions

  1. Soak the dried shrimp in warm water for 20 minutes, then drain; season the fresh shrimp with a pinch of salt and set aside.
  2. In a blender, combine the bread and coconut milk and blend until smooth, then pour into a bowl.
  3. In the same blender, puree the soaked dried shrimp, peanuts, cashews, onion, garlic, ginger, and water until smooth.
  4. Heat the olive oil in a large saucepan over medium heat and cook the pureed mixture, stirring, for 5 minutes until fragrant and slightly darkened.
  5. Stir in the bread-coconut mixture and simmer over low heat, stirring often, for 12 to 15 minutes until the vatapá thickens to a creamy paste.
  6. Add the fresh shrimp and cook for 5 minutes more, until they curl and turn pink.
  7. Stir in the dendê oil and season with salt to taste; serve hot over white rice, or as a filling for acarajé.

💡 Chef tips & storage

Dendê oil gives vatapá its signature orange color and nutty aroma — do not skip it, but do not let it boil hard, or it can separate. Vatapá keeps 3 days refrigerated and thickens as it cools; loosen it with a splash of coconut milk when reheating.
