Baião de Dois

Baião de dois, ‘baião for two’, comes from Ceará, where rice and black-eyed peas are treated as an inseparable pair, like a couple dancing the baião. Fragrant, smoky, and studded with cheese, it is the definitive comfort plate of the sertão.

The rice and peas cook in one pot until the grains are plump and the dish is creamy, with smoky bacon and sausage running through it. Cubes of melting cheese turn into soft ribbons with every stir.

Step by stepInstructions

  1. Drain the soaked peas, place them in a pot with 4 cups of water, and simmer for 25 minutes until just tender; drain, reserving 1 cup of the cooking liquid.
  2. In a large pot, render the bacon over medium heat for 5 minutes, then add the sausage and cook 4 minutes; remove both with a slotted spoon.
  3. Add the butter, onion, and garlic to the pot and sauté 4 minutes; add the tomatoes and cook 4 minutes more until softened.
  4. Add the rice and stir for 2 minutes to coat it in the fat.
  5. Return the bacon and sausage to the pot, add the drained peas, the broth, and the reserved pea liquid, and season with salt and pepper.
  6. Bring to a boil, cover, and simmer over low heat for 18 to 20 minutes, until the liquid is absorbed and the rice is tender.
  7. Fold in the cheese cubes and cilantro, cover, and let rest 5 minutes so the cheese melts; serve hot.

💡 Chef tips & storage

The dish should be moist, not dry — add a splash of hot broth if needed after resting. Queijo coalho is the traditional choice, but mozzarella or a firm salty white cheese melts beautifully too.
