Caldo Verde

Caldo verde crossed the Atlantic from Portugal and found a second home in Brazil, where it became a beloved winter staple. Silky potato purée, hair-thin shreds of dark greens, and slices of smoked sausage make it humble, hearty, and endlessly comforting.

The soup is smooth and creamy from potatoes, with ribbons of collard green adding a tender bite and the sausage contributing pockets of smoke and spice. A drizzle of olive oil on top makes it glow.

Step by stepInstructions

  1. Heat the olive oil in a large pot over medium heat and sauté the onion for 4 minutes until soft; add the garlic and cook 1 minute more.
  2. Add the potatoes and the stock, bring to a boil, then reduce to a simmer and cook for 20 minutes, until the potatoes are fork-tender.
  3. Blend the soup until completely smooth, in batches if needed, and return it to the pot.
  4. Add the sausage slices and simmer for 5 minutes to flavor the soup.
  5. Stir in the collard greens and cook 3 to 4 minutes, just until they turn bright green and tender.
  6. Season with salt and pepper, ladle into bowls, and finish each with a drizzle of olive oil.
