Tacu tacu was born in the Afro-Peruvian kitchens of Lima’s coast, where cooks refused to waste a single grain of leftover rice and beans. They mashed them together, fried the cake until shatteringly crisp, and crowned it with steak — turning humble leftovers into a restaurant-worthy plate.
Leftover rice and beans, reborn and crackling
The outside fries into a deep-golden crust that crackles under your fork, while the inside stays soft, savory, and slightly creamy from the beans. The garlicky, aji-spiked rice and beans are the perfect bed for a seared steak and a fried egg.
