Porotos Granados

Porotos granados is the dish Chileans wait all year for, made when the first beans, corn, and pumpkin of summer arrive. Fresh cranberry beans simmer with corn, squash, and a generous handful of basil into a stew that is part soup, part comfort, all nostalgia.

The beans are creamy and earthy, the corn pops sweetly, and the pumpkin melts into the broth, which is brightened by a big final handful of fresh basil. It’s light enough for a summer lunch but satisfying enough to be a whole meal with good bread.

Step by stepInstructions

  1. Heat the oil in a large pot over medium heat and cook the onion for 6 minutes until soft; add the garlic, paprika, and cumin and cook 1 minute until fragrant.
  2. Add the tomatoes and cook 5 minutes until they break down, then add the beans and the water or broth and bring to a boil.
  3. Lower the heat and simmer, partially covered, for 30 to 40 minutes until the fresh beans are tender (about 1 hour if using soaked dried beans).
  4. Add the pumpkin and corn, season with salt and pepper, and simmer 15 to 20 minutes more until the pumpkin is soft and the stew is thick and fragrant.
  5. Stir in the basil off the heat, taste for salt, and serve hot with pebre and crusty bread.

💡 Chef tips & storage

Fresh basil is the soul of this dish — stir it in at the very end so it stays bright. If fresh beans aren't available, soaked dried borlotti beans work beautifully.
