Pastel de choclo is Chile’s answer to shepherd’s pie, born from the country’s love of fresh corn. A creamy, slightly sweet corn topping blankets a savory pino of beef, onions, raisins, olives, and hard-boiled egg, then bakes until the top blisters into a caramelized crust.

The choclo topping is softly sweet and almost custard-like, with a golden, blistered top that hides a rich, cumin-scented beef filling. The raisins and olives play off each other in every spoonful — sweet, briny, savory, and utterly comforting.

Step by stepInstructions

  1. Heat 2 tablespoons of the oil in a large skillet over medium heat and cook the onion for 8 minutes until soft; add the ground beef, cumin, paprika, salt, and pepper and cook for 10 minutes until browned and dry.
  2. Stir in the raisins, transfer the beef to a 9-by-13-inch baking dish, and scatter the olives and egg slices over the top.
  3. Purée the corn with the milk in a blender in two batches until mostly smooth but still slightly textured.
  4. Heat the remaining oil and the butter in a large pot, pour in the corn purée with the salt, and cook over medium heat, stirring constantly, for 10 to 12 minutes until it thickens into a soft paste.
  5. Spread the corn mixture over the beef filling, smooth the top, and sprinkle with the sugar.
  6. Bake at 400°F for 35 to 40 minutes until the top is golden with darker blistered spots; rest 10 minutes before spooning out.
