Leche asada is Chile’s gentle answer to crème caramel — a silky baked custard of milk, eggs, and sugar, topped with a caramel glaze, baked in a water bath until just set. Its name means ‘roasted milk,’ and it is the humble, homey cousin of the flan: lighter, milkier, and less sweet, with a caramel bottom that turns into a glossy pool when unmolded. It is the dessert of Chilean grandmothers and family Sundays.

  1. Preheat the oven to 325°F and place a 9-inch round baking dish inside a larger roasting pan.
  2. Make the caramel: combine the 1 cup sugar and water in a saucepan over medium heat and cook, swirling occasionally, until deep amber, 8 to 10 minutes; pour into the baking dish and tilt to coat the bottom.
  3. Heat the milk with the cinnamon stick in a saucepan until steaming, then remove the cinnamon and stir in the vanilla.
  4. Whisk the eggs with the 1/2 cup sugar until pale, then slowly whisk in the warm milk.
  5. Strain the custard over the caramel, fill the roasting pan with hot water halfway up the dish, and bake 40 to 45 minutes until the custard is just set with a slight jiggle in the center.
  6. Cool completely, then chill at least 4 hours; loosen the edges with a knife and serve each portion with caramel spooned over the top.
