Ceviche Chileno

Chilean ceviche is a northern coastal tradition, and it’s all about the lemon: firm white fish ‘cooked’ in fresh lemon juice, tossed with tomato, red onion, and cilantro. It’s served ice-cold with corn and bread, bright, fresh, and bracingly citrusy.

The fish turns opaque and firm after a short soak in lemon juice, absorbing the citrus while staying silky. Tomato and onion add crunch and sweetness, cilantro brings freshness, and the whole thing is clean and zingy.

Step by stepInstructions

  1. Combine the fish cubes with the lemon juice in a glass or ceramic bowl, making sure the fish is submerged, and refrigerate for 15 to 20 minutes, stirring once, until the fish turns opaque.
  2. Drain off about half the lemon juice, leaving the fish barely covered.
  3. Add the onion, tomato, cilantro, and chili, and stir in the olive oil, salt, and pepper.
  4. Chill for 10 minutes more, then taste and adjust the salt.
  5. Serve immediately, ice-cold, with cooked corn on the cob and crusty bread on the side.

💡 Chef tips & storage

The fish 'cooks' in 15 to 20 minutes — any longer in the acid and it turns tough. Use the freshest fish you can find and serve it well chilled.
