Golfeados are the pride of Venezuelan bakeries, especially in the Andes, where they are baked in big trays and sold by the piece. These pillowy rolls are filled with grated papelón (unrefined cane sugar) and cheese, perfumed with anise, and glazed with a sticky syrup right out of the oven.
The sticky swirls of the panadería
Each roll is soft and feathery, with a dark, caramel-like swirl of papelón that turns almost chewy, and pockets of melted cheese that balance the sweetness. The anise gives them a warm, nostalgic aroma that fills the whole kitchen.
