Chocolate Fudge Cake with glossy fudge frosting

Fudge cake grew out of the American love for fudge candy, which became popular in the late 19th century, with bakers adapting the dense, rich fudge flavor into cake form throughout the 20th century. It became a favorite for birthdays and celebrations thanks to its deeply moist, intensely chocolatey crumb.

Dense, moist, and intensely chocolatey

A rich cocoa-based cake batter bakes into a moist, dense layer cake, finished with a glossy chocolate fudge frosting.

Step by stepInstructions

  1. Preheat the oven to 175°C and grease two round cake pans.
  2. Whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla, then stir in the hot coffee until smooth (batter will be thin).
  4. Divide between the pans and bake 30-35 minutes until a toothpick comes out clean.
  5. Melt the butter, whisk in cocoa powder, then alternate adding powdered sugar and milk until smooth for the frosting.
  6. Cool the cakes completely, then frost.

💡 Chef tips & storage

The hot coffee intensifies the chocolate flavor without making the cake taste like coffee. Let the frosting cool slightly before spreading so it doesn't run off the cake.
