Cuñapé is the beloved bread of eastern Bolivia, a cousin of Brazil’s pão de queijo. Made from yuca (cassava) starch and fresh cheese, these little golden rolls are served with coffee, beer, or just by the handful — impossible to eat just one.

The outside bakes into a thin, crisp shell, while the inside is chewy, airy, and intensely cheesy, with the subtle tang of fermented yuca starch. They are best warm, pulled apart in stretchy, glorious strands.

Step by stepInstructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment.
  2. Mix the yuca starch and salt, then rub in the melted butter with your fingers until crumbly.
  3. Add the egg, milk, and grated cheese and knead into a soft, slightly sticky dough.
  4. Shape into small balls about 1 1/2 inches wide, oiling your hands to prevent sticking.
  5. Bake for 20 to 25 minutes until puffed and golden; serve warm.

Use fresh, moist cheese for the best stretch. Cuñapé is best within hours of baking; reheat leftover rolls at 350°F for 5 minutes to bring back the crust.
