K’alapari is one of La Paz’s oldest street drinks, sold from thermos-wrapped carts in the cold dawn hours. It is a thick, warming beverage made from toasted grain flour — traditionally quinoa or barley — sweetened and scented with cinnamon and cloves.

Toasting the grain flour gives k’alapari a deep, nutty aroma that plain porridge never has. Stirred into hot spiced water, it turns silky and slightly thick — more drink than porridge — with a sweet cinnamon warmth that cuts the highland chill.
