Milanesa a Caballo

Milanesa a caballo is the Uruguayan diner classic: a perfect fried milanesa topped with one or two sunny-side-up eggs and served with fries. It is the ultimate hangover cure and weekend-lunch hero, beloved for the way the runny yolk acts as a sauce for the crispy cutlet.

When the egg rides the milanesa

The golden crust stays shatteringly crisp even under the fried eggs, and the moment you cut in, the runny yolk cascades down the cutlet into the fries. Salty, crispy, rich, and eggy — pure, unapologetic comfort food.

Step by stepInstructions

  1. Season the cutlets with salt and pepper, dip them in beaten eggs mixed with the garlic and parsley, and press into the breadcrumbs to coat evenly.
  2. Heat the oil in a large skillet over medium-high heat and fry the cutlets for 2 to 3 minutes per side until deep golden and crisp; drain on paper towels.
  3. Wipe out the skillet, melt the butter over medium heat, and fry the 4 eggs sunny-side up for 2 to 3 minutes, until the whites are set and the yolks are still runny.
  4. Place each milanesa on a plate with a pile of fries, and slide a fried egg on top of each cutlet.
  5. Sprinkle with a little salt and serve immediately, while the yolk is still running.

💡 Chef tips & storage

Fry the eggs just before serving so the yolks stay runny — that's the sauce. Leftover milanesas (without eggs) keep 2 days refrigerated and reheat crisply in a hot oven.
