Galette des Rois is the golden puff pastry tart of January: two crisp, shattering layers encasing a cloud of almond frangipane, with a tiny charm — the fève — hidden inside. The person who finds it is crowned king or queen for the day.

Baked across France for the Epiphany, it is traditionally served warm at gatherings with sparkling wine or cider. Slicing it for the table is a ceremony in itself, usually done so the youngest guest can decide who gets each piece.

Step by stepInstructions

  1. Beat the butter and sugar until light, then beat in the almond flour, 1 egg, the almond extract, and rum.
  2. Roll one pastry sheet slightly and place it on a lined baking sheet.
  3. Spread the frangipane in the center, leaving a border, and hide the fève near the middle.
  4. Brush the border with water, lay the second pastry sheet on top, and press to seal. Crimp the edge and score a decorative pattern.
  5. Brush with the egg glaze and bake at 375°F for 35 to 40 minutes, until deep golden brown. Cool slightly before serving.
