Chipa guasu is the fresh-corn cousin of sopa paraguaya: instead of dry cornmeal, it’s made with tender fresh corn kernels (choclo) blended with eggs, milk, and cheese, then baked into a moist, pudding-like cake. It’s the dish that shows up beside every grill in Paraguay, eaten in squares straight from the pan.

The texture is a marvel: light and puffed on top, dense and almost custardy in the middle, with bursts of whole corn kernels and salty pockets of melted cheese throughout. It’s sweet from the corn, savory from the onion and cheese, and impossible to stop eating.

Step by stepInstructions

  1. Preheat the oven to 375°F and butter a 9-by-13-inch baking dish.
  2. Sauté the onion in the butter over medium heat for 6 to 8 minutes until soft and golden.
  3. Blend half the corn kernels with the milk until mostly smooth, and leave the rest whole.
  4. Whisk the eggs in a large bowl, then stir in the blended corn, whole kernels, cooked onion, cornmeal, salt, and half the cheese.
  5. Pour the mixture into the prepared dish, scatter the remaining cheese on top, and bake for 40 to 45 minutes until puffed and deep golden.
  6. Cool 10 minutes before cutting into squares; serve warm.

💡 Chef tips & storage

Fresh corn makes the difference here, but good frozen corn works well in winter. Chipa guasu keeps 3 days refrigerated and reheats in a 350°F oven for 10 minutes, wrapped in foil.
