These plump, round Danish pancake puffs are a cozy holiday classic, cooked in a special dimpled pan and turned with a knitting needle until golden on every side. Light and slightly sweet, thanks to a touch of cardamom, they puff up tender and airy with a soft center.

Aebleskiver are a Christmas-market staple, traditionally served warm with raspberry or strawberry jam and a snowfall of powdered sugar, often alongside a cup of gløgg. Many cooks hide a small apple slice inside, but the jam-and-sugar treatment is the classic finish.

Step by stepInstructions

  1. Whisk the flour, baking powder, sugar, cardamom and salt in a large bowl.
  2. In another bowl, whisk the egg yolks with the buttermilk, vanilla and melted butter, then stir into the dry mixture until just combined.
  3. Beat the egg whites to stiff peaks and fold gently into the batter.
  4. Heat an aebleskiver pan over medium, add a dab of butter to each well, and fill each about three-quarters full with batter; add a piece of apple to some, if using.
  5. Cook until bubbles form and the bottoms are golden, then turn each ball with a skewer or fork and cook until browned all over and cooked through.
  6. Serve warm, dusted with powdered sugar and with jam alongside.

Turn the puffs with a wooden skewer or knitting needle for the classic round shape. Keep the pan well buttered between batches.
