Ceviche Yucateco - citrus marinated white fish ceviche

A traditional Yucatecan dish — Ceviche Yucateco ‘cooks’ pristine white fish in a bath of lime and sour orange, the peninsula’s citrus of choice. Tomato, red onion, cilantro and a whisper of habanero give it crunch, color and heat. Served ice-cold on tostadas with avocado, it is the taste of a Yucatecan beach afternoon.

Step by stepInstructions

  1. Toss the fish with the lime and sour orange juices and a good pinch of salt; refrigerate for 15 to 25 minutes, until the fish turns opaque all the way through.
  2. Fold in the onion, tomato, cilantro and habanero, and adjust the salt.
  3. Chill for 10 more minutes so the flavors meld.
  4. Serve ice-cold on tostadas with avocado slices.

💡 Chef tips & storage

Use only fish that is pristine and sushi-grade — the citrus does the cooking. Rinse the onion slices in cold water first if you want them milder and crunchier.
