Saksak is Papua New Guinea’s gift from the sago palm: sago starch mixed with water, formed into soft cakes or dumplings and cooked until translucent and jelly-like. It is a staple food in the Sepik and Gulf regions, where sago has fed families for centuries.

Steamed saksak is delicate and mildly sweet, made luxurious with a pour of coconut cream. It is served warm at home and at celebrations, often alongside mumu pork or as a sweet snack on its own.

Step by stepInstructions

  1. Mix the sago flour and salt, then gradually add the boiling water, stirring, until a stiff, clay-like dough forms.
  2. Shape the dough into small logs or cakes about 2 inches wide.
  3. Wrap each piece in banana leaf or foil and steam for 40-50 minutes, until translucent and set.
  4. Warm the coconut cream with the sugar in a small pot.
  5. Unwrap the saksak, slice or break into pieces and serve warm with the coconut cream poured over.

💡 Chef tips & storage

Sago needs steady steaming to turn glossy — don't rush it. If sago flour is hard to find, grind fine sago pearls in a blender until powdery.
