- Warm the ranchera salsa; season the lobster meat with salt and a little butter.
- Warm the tortillas one by one, then dip each into the ranchera salsa to coat lightly.
- Fill each tortilla with lobster, roll it up, and place seam-side down in a baking dish.
- Pour the remaining salsa over the enchiladas and spread the crema over the top.
- Sprinkle with the cheese and bake at three hundred seventy-five degrees until bubbling and lightly browned, about fifteen minutes.
- Garnish with onion, cilantro, and avocado; serve hot with rice and beans.
💡 Chef tips & storage
Do not overfill — the tortillas should roll easily without tearing. If fresh lobster is out of reach, good-quality frozen lobster tails work beautifully.
