Enchiladas de Langosta - lobster enchiladas

A traditional Baja California dish — Enchiladas de Langosta bring Puerto Nuevo’s famous lobster to the enchilada platter: tortillas dipped in ranchera sauce, filled with sweet lobster meat, and finished with crema and cheese. It is the luxurious cousin of the classic enchilada, born where lobster dinners are a way of life. Served with rice and beans, it is a Baja celebration on a plate.

Step by stepInstructions

  1. Warm the ranchera salsa; season the lobster meat with salt and a little butter.
  2. Warm the tortillas one by one, then dip each into the ranchera salsa to coat lightly.
  3. Fill each tortilla with lobster, roll it up, and place seam-side down in a baking dish.
  4. Pour the remaining salsa over the enchiladas and spread the crema over the top.
  5. Sprinkle with the cheese and bake at three hundred seventy-five degrees until bubbling and lightly browned, about fifteen minutes.
  6. Garnish with onion, cilantro, and avocado; serve hot with rice and beans.

💡 Chef tips & storage

Do not overfill — the tortillas should roll easily without tearing. If fresh lobster is out of reach, good-quality frozen lobster tails work beautifully.
