A traditional Puerto Rican dish — Arroz con Pollo is the island’s beloved one-pot chicken and rice, stained sunny yellow by annatto oil and rich with sofrito, beer and olives. Step by stepInstructions

  1. Season the chicken with adobo and oregano. In a large heavy pot, heat the annatto oil over medium-high heat and brown the chicken in batches, 4 to 5 minutes per side. Set aside.
  2. In the same pot, cook the sofrito and tomato sauce 3 minutes until deepened in color, then add the rice and stir to coat in the oil.
  3. Pour in the broth and beer, nestle the chicken into the rice, and scatter the olives on top. Bring to a boil, cover, and cook on low 25 minutes without lifting the lid.
  4. Uncover, sprinkle the peas and pimientos over the rice, cover again, and let stand off the heat 10 minutes.
  5. Fluff gently and serve with the chicken on top.

💡 Chef tips & storage

Do not stir the rice once it comes to a boil; that is what makes it fluffy. The pegao, the golden crust at the bottom of the pot, is a delicacy worth fighting over.
