- Make the mofongo: fry the plantain rounds in 350°F (175°C) oil until golden and tender, about 5 to 7 minutes. Mash them in a mortar with the garlic, salt, olive oil and chicharrón, then shape into four balls and keep warm.
- Season the shrimp with adobo. In a skillet, warm 2 tablespoons of olive oil and cook the shrimp 2 minutes per side until just pink; remove and set aside.
- In the same skillet, cook the sofrito 2 minutes, then add the tomato sauce and broth and simmer until slightly thickened, 5 to 7 minutes.
- Return the shrimp to the sauce and simmer 2 minutes more.
- Serve each mofongo ball in a bowl with the shrimp and sauce ladled over it.
💡 Chef tips & storage
Do not overcook the shrimp, as they finish in the sauce. The mofongo can be made ahead and reheated, but it is best freshly mashed.
