Step by stepInstructions

  1. Cook the ground beef with the onion, garlic, tomatoes, cumin, achiote, and salt until browned and well seasoned, then keep warm
  2. Fry the tortillas one at a time in hot oil until crisp and golden, draining them on paper towels
  3. Spread each crisp tortilla with a layer of warm refried beans
  4. Top with a spoonful of the seasoned beef, then a mound of shredded cabbage
  5. Finish with a drizzle of tomato salsa, sliced hard-boiled egg, crumbled cheese, and a swirl of crema
  6. Serve immediately, two per person, with extra salsa on the side

💡 Chef tips & storage

Keep the tortillas crisp by frying them just before serving and piling the toppings lightly. A quick homemade salsa of blended tomato, onion, and culantro beats anything bottled.
