Crab curry is the special-occasion dish of Sri Lankan coastal kitchens, especially around Negombo and the lagoons of the west. Fresh blue swimmer crabs are cleaned and simmered whole in a coconut gravy that is spiced but never overwhelming. It is messy, hands-on eating, and that is half the joy, everyone cracks shells and talks over the noise. Fishermen’s families eat it the day the catch comes in, when the meat is sweetest, and the dish is best eaten with the hands and a healthy appetite.
