Tarte Flambée — also known as flammekueche — is the Alsatian flatbread of paper-thin dough spread with crème fraîche, scattered with soft onions and smoky bacon, and baked blisteringly hot until the edges char. It is the French answer to pizza, and it is glorious.

Baked in wood-fired ovens along the Rhine, it is traditionally served as a snack or light meal with a cold beer or a dry white wine. Eat it hot, straight from the oven, torn into pieces and shared.

Step by stepInstructions

  1. Mix the flour, yeast, salt, water, and olive oil into a dough; knead 5 minutes and rest 30 minutes.
  2. Cook the bacon until crisp and set aside; sauté the onion in the bacon fat until soft and lightly golden.
  3. Divide the dough and roll each piece paper-thin on a floured surface.
  4. Spread each round with crème fraîche, then scatter with onion and bacon; season with nutmeg and pepper.
  5. Bake at 500°F (or the hottest your oven goes) for 8 to 10 minutes, until the edges blister and brown. Serve immediately.

Roll the dough paper-thin and bake as hot as your oven allows for blistered, charred edges. Eat it hot out of the oven — it is meant to be shared.
