The bifana is Portugal’s greatest street food — thin slices of pork shoulder simmered in a garlicky, paprika-spiked broth, then piled into a soft roll with a spoonful of the fiery cooking juices. It is messy, bold and completely addictive.

Every region, café and tavern has its own twist, some spiking the marinade with piri-piri and white wine. The rules are simple: the bread must be crusty outside and pillowy inside, the pork tender, and the juices abundant enough to drip down your wrist.

Step by stepInstructions

  1. Marinate the pork with the garlic, wine, bay leaves, paprika, piri-piri, salt and pepper for at least 2 hours, or overnight.
  2. Heat the olive oil in a wide pan, add the pork with its marinade, and simmer gently until the pork is cooked and the liquid reduces into a savory sauce, 20-25 minutes.
  3. Split the rolls and toast them lightly; brush or dunk the cut sides in the cooking juices.
  4. Pile the pork into the rolls, spoon over extra sauce, and serve hot.

Slice the pork paper-thin so it cooks quickly and stays tender. Toast the rolls lightly, then mop them with the sauce before adding the meat.
