Lasagna is the grand dame of Italian baking: layers of tender pasta, slow-simmered meat sauce, creamy ricotta, and plenty of melted cheese. Cutting into it reveals picture-perfect, steam-billowing layers.

Every Italian family guards its own version, from hearty ragù-based classics to lighter vegetable renditions. It’s the ultimate make-ahead dish for feeding a crowd, and it somehow tastes even better the next day.

Step by stepInstructions

  1. Brown the beef and sausage in the olive oil over medium-high heat, breaking it up; add the onion and garlic and cook until soft, about 5 minutes.
  2. Stir in the crushed tomatoes, tomato paste, oregano, salt, and pepper; simmer 20 minutes until thickened.
  3. Cook the noodles until just al dente, drain, and lay flat on a kitchen towel.
  4. Mix the ricotta with the eggs, 1 cup of mozzarella, and 1/2 cup of Parmesan.
  5. Spread a thin layer of sauce in a 9x13-inch dish; top with noodles, ricotta mixture, sauce, and mozzarella. Repeat the layers, ending with sauce and the remaining cheese.
  6. Cover with foil and bake at 375°F for 30 minutes; uncover and bake 20 more minutes until bubbly and golden.
  7. Rest 15 minutes before slicing.

💡 Chef tips & storage

Let the lasagna rest before cutting so the layers hold their shape. For crispier edges, uncover for the last 10 minutes and switch the oven to broil.
