Migas transforms day-old bread into a rustic, garlicky stir-fry, crisped in olive oil with chorizo, bacon, and peppers. The bread cubes turn golden and crunchy outside while staying chewy within — hearty, savory, and made for cold mornings.

Originally a shepherd’s meal born from using up stale bread, migas is now a treasured rural specialty, especially in La Mancha and Aragon. Top with a fried egg or grapes for a sweet-savory contrast.

Step by stepInstructions

  1. Spread the bread pieces on a tray and sprinkle with the salted water. Toss and let stand 15-30 minutes, so the bread softens but keeps its shape.
  2. Heat the olive oil in a wide cast-iron skillet over medium heat and cook the garlic until pale gold. Remove and set aside.
  3. Add the chorizo and bacon to the skillet and cook until the fat renders and the edges crisp, about 6 minutes.
  4. Add both peppers and cook 3 minutes, then stir in the paprika.
  5. Add the moistened bread and cook, stirring often, for 12-15 minutes until the crumbs turn golden and crisp in places.
  6. Return the garlic to the pan, season with salt, and serve hot, topped with a fried egg and grapes if desired.

Moistening the bread is essential — dry bread will turn into croutons instead of migas. Let the crumbs crisp slowly; rushing them on high heat burns the garlic before the bread browns.
