Served as a breakfast porridge with milk, or as a savory side with onions and mushrooms, kasha pairs with almost anything. In many homes it is simply the dependable backdrop of the daily meal.

  1. Rinse the groats well and drain.
  2. Toast them in a dry skillet over medium heat for 2-3 minutes, stirring, until fragrant.
  3. Bring the water or broth to a boil, add the salt, and stir in the groats.
  4. Reduce the heat to low, cover, and cook until the liquid is absorbed, 15-18 minutes.
  5. Remove from the heat, lay a clean towel over the pot, replace the lid, and rest for 10 minutes.
  6. Fluff with a fork, stir in the butter, and top with sautéed onions and mushrooms if using.

💡 Chef tips & storage

Toast the groats before cooking to deepen their nutty flavor. Resting the covered pot off the heat makes the kasha light and fluffy instead of sticky.
