Escalivada is a smoky Catalan vegetable medley of charred eggplant, peppers, onions, and tomatoes, peeled and dressed with olive oil and garlic. Slow roasting coaxes sweetness from the vegetables and deepens their earthy flavor.
The name comes from the Catalan verb for roasting over embers, and that gentle smokiness is the soul of the dish. Serve it as a tapa with bread, or alongside grilled meat and fish.
